Keto Mason Jar Ice Cream: 3 Recipes – Vanilla, Almond and Chocolate
Mason jar ice cream, as the name suggests, is made in a glass jar. And we just love it for convenience, cuteness, and a variety of tastes too. But how about those following the healthier path? I don’t know about you, but I refuse to live in a world where there are no keto mason jar ice cream options! So in this post, I’d love to share some. (And those would be not only low carb but also vegan friendly).

Is traditional mason jar ice cream keto-friendly?
Mason jar ice cream typically comprises heavy cream, granulated sugar, vanilla paste or extract, and salt. According to Fitbit, half a cup of regular homemade vanilla ice cream contains 7g of fat, 3.5g of protein, 16g of carbs (including 14.5g of sugar), and 145 calories.
That’s quite a lot of sugar, so by no means, I would recommend it for those following a ketogenic diet. Not to mention that many kinds of dairy can be insulinogenic and, therefore, not suitable for efficient keto.
How to make keto mason jar ice cream?
The best mason jar keto recipes replace traditional ingredients with cleaner versions. Instead of sugar and dairy milk, I’d go with erythritol and non-dairy substitutes such as cashew milk, almond milk, and coconut milk.
Besides the fact that erythritol is entirely natural, it has zero calories. It is quickly absorbed and excreted by the human body. It’s probably my #1 choice of sweeteners for a clean keto (if you absolutely have to eat some sweets).
Except for rice and oat milk, non-dairy milk substitutes contain lots of vitamins and minerals, few calories, and no lactose. They are the ideal choice for vegans and individuals on a keto diet.
Dairy-free almond keto mason jar ice cream
Exquisitely smooth and super creamy, this recipe tops my list for easy keto ice cream in a mason jar – it might blow your mind too. If you’re worried about allergies, it can be nut-free, with no need for preservatives, xanthan gum, or an ice cream maker. Also, if you're looking to try something besides almond milk, you can use coconut milk, soy milk, or cashew milk ('m a big fan of the almond cashew combo). You may also make your own almond milk at home.
Notes
This ice cream is probably the least keto on the list, but it’s still possible to eat on your cheat days (once other carbs are excluded) and I personally find it so good! It has 21.6g of net carbs per serving (although I am sure you can lower this number if you look for the LEAST carby ingredients).
Ingredients
- 28 oz (2 cans) of unsweetened coconut cream
- 1 cup of erythritol
- 1/2 cup of unsweetened cocoa powder
- 1 tsp of vanilla
- 1/2 tsp of Kosher salt
- 1/2 cup of chilled coconut milk
- 3 tsps of organic psyllium husk
- 1 cup of shredded unsweetened coconut
- 1 cup of toasted almonds
Instructions
- 1. In a mid-sized pan over moderate heat, mix coconut cream, erythritol, cocoa powder, vanilla, and kosher salt. Beat them over medium heat for between 2-3 minutes until the sugar melts, and the cocoa and coconut cream are uniformly mixed.
- 2. Combine coconut milk and psyllium husk powder in a small mason jar and shake vigorously. Pour the cornstarch mixture into the pan while you stir its contents over moderate heat.
- 3. Continue this process until the mixture starts to thicken. It should take between 3 and 5 minutes. Take the pan off the stove and deposit its contents into a bowl.
- 4. Leave your ice cream base to cool until it’s at room temperature, then chill it for at least one hour.
- 5. Pour the base into an ice cream maker (or powerful blender) and let it stir according to the manufacturer’s instructions (should take 15 to 20 minutes). Before that time is up, add the coconut and almonds.
- 6. Let it churn for a few more minutes, then stop the ice cream machine. Serve and enjoy.

This super convenient recipe combines coconut milk, cashews, and non-dairy milk to make delicious, vegan-friendly keto ice cream in a jar.

Remember to freeze the ice cream in a heavy-duty glass jar. Glass jars are transparent, so it’s easy to see what kind of ice cream you have on the inside, and they have lids so you can keep them closed while in the freezer.
Ingredients
- 1 can (13 ounces) coconut milk
- 1 ½ cups of soy milk
- 1/2 cup of raw cashews
- 2 tbsp of melted coconut oil
- 1/2 cup of erythritol
- 1/4 tsp of salt
- 1/2 tsp of xanthan gum
- 3/4 tsp of peppermint extract
- 1/2 tsp of pure vanilla extract
- 12 leaves of spinach
Instructions
- 1. Mix the canned coconut milk, cashews, non-dairy milk, refined coconut oil, vanilla, salt, xanthan gum, erythritol, and peppermint extract on a power blender. You may also add the spinach leaves at this point.
- 2. Refrigerate the mixture for at least four hours, then transfer it to an ice cream maker base and churn until it is softly frozen. This should take between 20 and 25 minutes.
- 3. If you want soft frozen ice cream, serve immediately. For firm-textured ice cream, freeze it for another 3-4 hours.
